Milk makes an excellent cooking medium for meat and fish, much loved and used across many continents. Scottish fishermen wives have always used the white stuff in which to poach their famed smoked Mackerel and other fish.

We all know the legend about Cleopatra and that Asses' milk bath, but the white stuff is actually far more useful in the kitchen than the bathroom, both cow and goat milk great for use in marinating, poaching and even simmering meat and fish.
Using milk, or buttermilk can help to keep flesh moist, and the more full-bodied the milk is, the rounder and deeper the flavour can become. There is a long history of using milk in cooking, not just with flesh offerings, but also in sweet concoctions and for poaching vegetables now and again as well

Italian-Americans are very fond of using milk in their culinary efforts, the beef for bolgnese dishes often simmered in milk to render it much more tender, and both Indian, Pakistani and Turkish chefs will marinate meat in yoghurt for hours before preparation.

In every case, those cooking know that the Lactic acid contained in the dairy produce is what aids the tenderizing, rendering the flesh more juicy for eating, as well as making it more absorbant of other flavours. When using milk, though, be careful of acidic ingredients within the dish being prepared.

Milk based sauces have been known to curdle if cooked at too high a temperature, but one can make success in the cooking process more likely if one tends toward the use of whole fat, rather than reduced fat milk, Also be aware that you ought to exercise caution when heating low-fat buttermilk dishes, as they spoil easily.

Using milk to enhance your cooking is nothing new in society, to be sure, but the idea may well be new to you, at least in terms of cooking beef with it. There should be no reason why you could not create wonderful new dishes for yourselves and your family, just by thinking about trying an old thing in a different way. Milk truly is a marvellous asset when it comes to creating great food.
